Chocolate Pumpkin Protein Pancakes
I'm not sure about you guys but I could eat pancakes every morning and not get tired of them, but if we are being honest it's probably not the best thing while trying to lose that muffin top! That's why I have created a recipe that kills those cravings for sugary pancakes. I have found telling myself i cannot eat something almost makes me want to eat it more, so I'm always working on ways to make my favorite not so healthy foods, macro friendly & just healthy! So here's one of my favorite protein pancake recipes with pumpkin! I hope you enjoy it just as much as i do!!
- 2 scoops cake batter or vanilla flavored protein powder
- 1 cup oat flour
- 1 cup almond milk (unsweetened)
- 1.5 cups pumkin (no sugar added)
- 2 egg whites
- 1/3 cup plain chobani greek yogurt
- 4 tbsp dark choc chips
- 1 tbsp cinnamon
- 1 tbsp pumpkin pie spice
- 1 tsp vanilla extract
Mix all of your wet and dry ingredients separate and then combine. Make sure batter is nice and smooth, and should be a similar consistency as regular pancake batter. Fire up the stove and use coconut spray instead of butter or oil to cook the cakes.
Top with a couple tablespoons of peanut butter and/or fruit! (optional)
