Sweet potato quiche
This is one of my favorite recipes for breakfast, its super simple and the perfect thing to make if you have a hectic schedule like mine. I normally make enough for a few days so i can just pop a slice in the microwave and eat it on my way to work. Most quiches have a pie-like crust and I am not a fan. So try this gluten-free and low-fat quiche, you will love it! It’s also perfect if you’re following the whole 30 diet.
Ingredients:
· 1 large sweet potato
· 8 slices turkey bacon
· 1 cup bell peppers of choice
· 1/2 cup onion of choice
· 1 cup spinach
· 1 cup egg whites/1/2 cup whole eggs
· 1/2 cup fat free feta cheese, crumbled (optional)
· 1 tablespoon sea salt
· 1 tablespoon freshly ground black pepper
Directions:
Preheat oven to 350. Wrap sweet potato in tin foil and put in oven once preheated. In the meantime chop your bell peppers, onions, and turkey bacon up and sautee together. Once the veggies and turkey bacon are feeling tender add in your cup of spinach. Set aside. Pull sweet potato out once you can stick a knife through, DO NOT cook until the sweet potato is mush. Peel skin off and slice potato in to round pieces. Coat a pie dish with cooking spray (I use coconut) and then layer dish with sweet potato.
Add your layer of veggies and turkey bacon,
mix in your salt and pepper with your egg whites and pour over. Finish off by sprinkling your half cup of feta cheese.
Pop in the oven for about 30 minutes or until cooked all the way through.
I portion mine out and throw them in to tupperware so it’s easy to grab in the mornings. Throw some salsa and avocado on top to make it even better!!!
